Make your own dried tomatoes. Start by slicing a ripe tomato one-half inch thick, or you can cut Roma tomatoes in half lengthwise. Place cut side up on a clean cooling rack and salt lightly. Heat your oven to 190 degrees and place the tomatoes inside for as long as ten hours. Place the tomatoes into a freezer bag, and freeze them for later use. Dried tomatoes could also be put in a jar with fresh herbs and topped up with olive oil. Tomatoes stored in this fashion will last for two weeks in the refrigerator.
